How does a touchstone on jewelry work?

I need to know the physics behind how a jeweler can tell the authenticity of jewelry by using a touchstone. Can anyone explain this to me, even if you don’t know a whole lot about it?

    first, i think you need to figure out the touchstone is used for which kind of jewelry? is it for diamond? sapphire? jade? you need to know different gemstones have its own features.

    In analyzing a jewelry we van use metallurgical assay. Metallurgical assay is analysis for metal and alloy. Assay methods are suitable for raw materials while others which are better suited for finished goods. Raw precious metals are assayed by an assay office. Silver is assayed by titration, gold by cupellation and platinum by inductively coupled plasma optical emission spectrometry. James
